minutesLet me introduce you to my latest obsession: the Zucchini Caprese Sandwich. It’s a twist on the classic Italian version, minus the tomatoes. It’s super simple to make and hits all the right spots – crunchy, creamy, and bursting with flavor. Trust me, you won’t even miss the tomatoes!
Ingredients
1/2 zucchini cut into thick slices
2-3 thick slices of mozzarella or 1/2 cup of bocconcini
2-3 tablespoons of pesto
salt & pepper to taste
2 slices of good quality bread
Directions
- Char the zucchini slices on a dry hot pan for a few minutes on each side, seasoning generously
- In the meantime, toast your bread and slather the pesto generously on both sides.
- Place your charred zucchini on top of one slice, add your cheese, and pepper, and top the second slice of bread
- Cut the sandwich in half and enjoy!

Notes
- Use a nonstick or hex clad pan to char the zucchini preferably to avoid sticking since we’re not using oil
- Allow the zucchini to cool for a few minutes before adding it to the sandwich to avoid becoming soggy
- You can cut it into bite-sized pieces and also serve it as finger food
