Ingredients
1 cup fresh coriander (cilantro) leaves and tender stems, washed
¾ cup fresh mint leaves, stems removed
3 green chilies (adjust to taste, e.g., Serrano or Thai bird’s eye)
3 garlic cloves
½ inch fresh ginger, peeled
1 tsp chaat masala
1.5 cups Greek yogurt (full-fat for best texture; adjust amount to taste)
To taste: Salt
Optional: 1–2 tbsp water (only if needed for blending)
Directions
- Prep the Herbs
- Thoroughly wash the coriander and mint. Be sure to remove the stems from the mint (they can be bitter), but keep the tender stems of the coriander for extra flavor.
- Blend the Herb Paste
- In a blender or small food processor, add the coriander, mint, green chilies, garlic, ginger, chaat masala, and a pinch of salt. Blend until a smooth, thick paste forms.
- Try not to add water to keep the flavors concentrated. If your blender stalls, add water just 1 tablespoon at a time to get things moving.
- Whisk the Yogurt
- In a separate mixing bowl, whisk the Greek yogurt until it is completely smooth and creamy. This prevents lumps from forming in your final chutney.
- Combine and Adjust
- Fold the green herb paste into the whisked Greek yogurt. Stir until completely combined and a beautiful, uniform pastel green color is achieved. Taste and add more salt or chaat masala if desired.
- Serve
- Serve with pakodas, samosas, onion bhajis and more. It also goes with anything from the grill and daily meals.
