Ingredients

  • 4 Nori Sheets

  • 1 cup quinoa – cooked as per package instructions

  • 1 sliced avocado

  • Veggies of your choice. I used – 1 julienned cucumber, 1/2 sliced yellow bell pepper

  • Protein of your choice. I used – 200g of boiled prawns

  • Kewpie Mayo

  • Sriracha

  • Furikake (optional)

Directions

  • Prep
  • Cook the quinoa as per package instructions and let it cool and dry completely
  • Prep your veggies and cut as julienne
  • If you’re using prawns you can boil it for 2 mins. Any other protein – cook it thoroughly.
  • Assembly
  • Line your nori sheet shiny side down and make a slit halfway in the middle
  • You should now have 4 quadrants
  • Add your toppings to each quadrant
  • Top with kewpie mayo, sriracha, and furikake
  • Fold the bottom left quadrant on top of the top left quadrant. You should see an inverted ‘L’
  • Fold this quadrant on top of the top right quadrant. You should have a ‘I’ left
  • Fold from top to bottom and you should be left with a folded wrap
  • Serve and enjoy!

Notes

  • You can add any veggies you choose and make this only vegetarian. Just ensure they are sliced thinly so they fold into a wrap well.
